i have an 03 evo 8 gsr with minor mods that dont do too much. and sage auto is putting in a 2.3 stroker into my 4g63.
been looking around and was wondering what sort of gains i'd be looking at with all stock minus the 2.3 stroker?

you will probably loose the smoothness and the speed at which your 2.0 liter would rev; it will probably feel with your 2.3 that you have a heavier flywheel almost(when it comes to the speed at which you rev)
you will have better transient response(on off power between shifts) if you keep the same turbo you had on before the swap(it would be less pronounced if you were moving up to a larger turbocharger) but my point is that your 2.3 will allow you to feel more like a v8 engine. You will have earlier peak torque as well as just not having to wind out your car as much.
You will probably be shifting a lil less

been driving on mine for a few months now, love it. You will get faster spool on trubo, increased torque along with a peak torque sooner. You will be able to drive around more like and N/A car staying out of boost. You will lose some rpm I keep mine limited to 7500
I dont go over 7,300 in an endurance application. I hear you can rev to 8,000 in a drag application though. Might want to check on their site first, but they should have that listed
I have a 2.3 stroker and stock evo 8 turbo. It hits harder on the spoolup but the top end SUCKKS on the 16g. It feels like the motor is doing all the work. I was revving to 7600 and I was running high 13's until I started shifting at 6000 rpms after examing load calc and ran a 13.4. 2.3 strokers are NOT for 16g's. They are mid-range monsters, that's it.
