Rough start, rough idle, sputtering on throttle

I recently finished my build and started my car up. I broke my engine in as I was told but I'm scared to drive the car due to some issues I'm having. I recorded logs the best I could. The car dies on idle often and runs super rough. If I press the throttle down far the car starts stumbling or straight up dies. I have to modulate the throttle to keep the car running. After the car warms up the car will idle on it's own, but I pulled the throttle cable tight on the intake manifold which brings the TPS sensor to 14.58 at "idle". Base timing is at 0. Ignition timing is 14 degress. I got a base map tune from ER but they're closed for the weekends so I can't call them.

How long was the car down during the build? If it was a good amount of time, drain the gas and check the fuel filter.

1 year 2 months the car was down for.. Plugs are gapped to .21/.22

I know fuel can go sour but do you think this will cause the issue? Is there a plug on the tank or am I going to have to pump the fuel out?

There's a drain plug under the car on each side of the gas tank under the back seat area.

Here's my tank, pump and filter after sitting a while.

I replaced my fuel pump and sock. I didn't see any debris floating around in there.

I would still go for some fresh gas either way. Have you checked the IACV?
