Some people is far from "everyone". My stocker lasted 80k miles at 330-350 wtq, and I'm far from the only one to get good mileage out of the OEM clutch. (Most notably, 4RETECH got 200k out of his).
My stock lasted 55k @ 291whp and 20+ track events.

Anyway, talk to a respectable evo shop in your area to get a quote on the clutch job.
You can find a clutch and get it installed for $1000 if you're smart about it.

Average cost to have it installed by a good shop.. $500.

What i'm trying to say is, do whatever you need to do to calm down. Then work on getting a decent clutch put into the car. One thing everyone can say is that Mitsu can't put a proper clutch in these cars if it meant their business.
My suggestion, go with Exedy.

So, finally bought the car of my dreams, Evo IX. less than 40,000 miles on it so it gets a NYS Lemon Law Warranty of 60 days with it. Within 4 days and less than 500 miles the clutch starts slipping. No launches, no abuse of any sort to it. I take it in to have them look at it and fix the CEL for an EVAP system error. They come back to me and say they want $2500 TO F***KING FIX THE CLUTCH........So.... am I screwed? what do I do? I'm so angry right now I can't think straight. I literally didn't drive the car any harder than I normally do.... I don't know what to do...
However, your are confusing lemon law,
Example car you purchased has a substantial problem, that not only affects value, but safety.
NYS lemon law the car must be repaired 3x or more for the SAME issue. Like 3 clutch jobs.
Also you can lemon it if it has been in the shop 30 consecutive days while attempting the repair.
Lemon law is so if you spend say 20k on a car & the trans takes a dirt nap dealer is responsible.
Now if you explained that you are entitled to car that free from any defects.
A Burt out clutch, bad brakes , bad electrical , bad motor.
You can sue them in small claims court, this is an option if $5,000.00 or less.
You said your out $2,500, this is a perfect case for you, as long as you proved the failure within the 60 days or xyz miles, usually whatever comes first.
I have been very successful in this particular area.
I've never lost, any shop who has tried has been sued & monies recovered.
I've had upwards of 15 cases throughout the years.,
Never lost EVER.

I just clipped a shop for $2,100.00 for poor quality work that never worked as it was supposed to.
Good luck it sucks getting bills, let alone one this big for something that is imperative to drive.
I run an Exedy twin carbon during the spring/summer time for track events and swap out to a competition 3.5 segmented disc for winter duty. Stock clutches IMO are fine for the average joe, as soon as you launch it a few times it's toast.. that's just my experience with it.
Found out the car has a Exedy Twin that's pretty shot. Looking at the rebuild parts for it and I have no idea why they want $2600 to fix it. I'm in contact with STM about it as well. What would the usual rebuild cost for that particular clutch be?
Oh! I just pieced it all together. Black? At Cortese?
