Your idle needs to be set. If you have evoscan and a tactrix cable you can do this with the biss screw quite easily. If you don't your next best bet is go out into an area where no one will bother you for idling for about half an hour. I just go onto old country roads. Idle for ten minutes with everything that draws power off (lights, air con, etc.). After those ten minutes idle with everything on, crank the fan, highbeams on, rear window defroster on, etc. Do this for ten minutes as well and then go for a drive. Yor car might naturally idle a little bit higher now but it shouldn't drop low in revs or almost stall.

In regards to your temp gauge check your coolant and your oil and make sure they haven't mixed (blown headgasket). Check your thermostat as well to make sure it's not getting stuck. If you have evoscan with a tactrix cable you can log your coolant temp, if it stays at 90 celsius on evoscan but the gauge is moving around then it's an electrical issue somewhere along the line.

It'll take the ecu a while to get it perfect but at least it isn't stalling anymore.
