The service engine light went away. Should I still get it checked out? And why would it just randomly go away?

No one knows why the light would randomly go away?

I don't know...ask the light why it went away...

Trying to diagnose an electrical issue on a car can be tough. At least you know that it is the front sensor, so if it happens again you know what would have to be replaced.

For most "out of range" codes the car may detect that it has been back "in-range" for a long enough period and assume it was a batch of bad gas, high altitude, or some other unknown issue. Likely the code is still stored in the ECU, but the CEL / SES is just not displayed any longer.

Describing your problem as "when I put the car into 5th gear and got on it a little" is not really very descriptive. Is it only in 5th gear? ...when you are on the throttle 40% for 2 seconds? ...when you are WOT for 5 minutes? We aren't magicians... we need every detail possible (within reason) to help solve your problem.

My cel turned off for a day last month and came back on.
I don't know why either but it is related to your exhaust
your tuner will be able to fix it for you or switch out your test pipe
