I'm not trying to "skimp" on the general maintenance dude.. What I'm trying to do is see what is REALLY required for the 15k service and what i can skip if it is not needed.

As a former mechanic, that cost is not that out of line. Labor alone is probably half of that. As a former S600 owner I laugh at how cheap that is.

If you choose to do the fluid changes, make sure to save all your receipts. Mitsubishi is notorious for voiding warranties for anything they can. Iv'e gone so far as taking pictures of myself doing the service with the OEM fluids to go along with my receipts just in case, but I might be a little on the paranoid side.

The engineer's perspective:
You need to perform all the recommended tasks. The Mitsu engineers look at failure modes, effects and criticality. They then assess what (and when) preventive maintenance tasks could prevent or extend the interval for failure. They then group (usually pulling forward some tasks) these tasks so that you only make some scheduled trips to the dealership (and not once every few weeks for one task).

You could elect to NOT do any of the preventative maintenance at all. The car won't "blowed up, dang! :O " only 12 miles past the interval.

But I am quite certain the car will not achieve the full design life.

You may (should) choose to do most of these tasks yourself with how-to help from our forum. Then have the dealership (or any competent shop) perform what you are not able to do yourself.

That's cheaper than the service on my wife's Outback.

Change the fluids yourself. Do the transfer case, transmission, diff, etc. Even though the book says 30k for normal service intervals, doing it every 15k is a good idea (especially if you EVER drive hard, which I hope you do). There's reasons why severe duty intervals are 15k.

Do the oil and oil filter. Air filter SHOULD be fine (if it's dirty, change it).

Not sure if your tires are directional or not. Depending on that, you can rotate the tires yourself.

If they're gonna do a free alignment, then definitely have them do it.

There's really no reason to spend that much unless you're completely incompetent when it comes to cars or don't have the space/tools to do it. Doing these things isn't hard at all.

LOL, right? I charge $120 plus fluids to change everything on an Evo (except coolant).

Just find a local shop and ask them how long it would take to change the fluids. Bring them the fluids and pay their hourly shop rate. Shouldn't take more than 2 hours.

That is currently the plan. Any advice on what fluids "should" stay OEM? If not, what brands does everyone suggest?

I like Redline for whatever they've got. Note, shockproof oils are not transmission oils
