350z or keep the evo
The key here is how much do you go to the track and "Street race" if you don't do either I would buy a 350Z in a heartbeat. The EVO is more fun, but only in spirited driving and if you aren't going to be breaking the law (which is awesome by the way) or racing at the track I wouldn't hesitate to trade.
I would pay in full and keep the Evo forever. Then, after that, buy a used cheap 350z and force induct the hell out of it for highway runs.
I did not buy the Evo because the proposed car would be used extentsively and suffer in high miles; and the Evo being turbo that sort of scared me a bit. Since the Z is aspirated, likely it will last more enginewise.

The evo and the z are both very good speed machines, only the target speed is defferent. Evos are built rally cars made for rapid acceleration. But, on a high speed course where both cars are over 60mph most of the time and hitting 160+, the z will be best. On a short track, it's common knowledge the evo will destroy the z.
And people, please do not underestimate the z. Its embarassing. Plus, everybody is concluding the evo is faster. Although true to some extent, on the highway, after 70 mph, playing with a z like that can be a fatal proposition to a hurtful loss. Specially with the stock VIII's. I have done it myself quite a few times.

My brother has a 350Z which I was driving around when I visited him in LA. Here's what I wrote when I drove it, an Evo, and an STi back to back.

That being said, my stock RS beats my friend's 350Z on Toyo RA1s at the autox. Even if I moved to someplace without snow I'd have a hard time getting another car over the Evo
But the 350Z definitely is a nicer car to drive, and with more skill might be faster around a track.

Drove my brother's 350Z a lot while I was there. That car is a pleasure to drive, the throttle response is amazing and plenty of torque at any rpm (3.5L V6 with throttle-by-wire). Center of gravity is low, so there's almost no body roll, and even though I wasn't pushing it hard the grip it has is amazing. Best of all is the steering, it's nice and heavy, and lets you feel everything on the road. You know exactly what's going on. It's supposed to have a variable steering weight, so it feels heavier the faster you travel. On Saturday we headed off for a short hike towards Mount Waterman. The drive to and fro was amazing, 6000ft above sea level!
Afterwards we went to Thousand Oaks Auto Mall and got to drive an STi 9. After driving the Z it was a big disappointment. Because it was a new car (230 miles on the motor) I didn't want to rev it really hard (but made it up to 5k rpm after I was told that it's the official demo car), so it's unfair to compare it's low-end acceleration to the Z. But the lack of any feedback from the steering wheel was a big turn off. Had a scary corner where I got a bit too close to the curb, but I returned the car without a scratch. The salesman knew my brother from a few Subaru meets he had attended; he has a modified and lowered forester that's reserved for track days. Stupid fast and handles great, doesn't even have a passenger seat. He offered the STi for $500 over invoice price.
Then got to drive a regular Evo IX at Miller Mitsubishi. This thing had 4 miles on the motor, so I didn't push it at all, but the new MIVEC engine seems to reduce a lot of the turbo lag the previous Evo had so it builds boost really quickly at low rpms. Steering was yet again not as impressive as the Z's, but felt a bit better and quicker than the STi. That salesperson sucked so I only got to drive it around the block, so I can't pass much judgement. They wanted $2000 over MSRP for the Evo MR (so that's around $38,000) and around MSRP for the regular and RS. But the Thousand Oaks Mitsu dealer offered any Evo for $500 over invoice price without any bargaining on our part. n00b.
It's clear that if we had sunny skies the entire year and nice smooth twisty roads something like a 350Z is the car to get. You might get from point A to point B faster in an STi, but just the sheer driving pleasure of driving the Z is worth it. But we have snow, potholes, and no place to garage a car for the entire winter.

Im in the same situation right now. Im thinking of getting rid of the Evo for either a 350z or a G35 but i dont know what i wana do. Ive been thinking about this for sometime now and im really getting towards getting a G35

Ok with the debate going.. back to the original question.. Should you get a 350z? I don't know your reasoning at all, so I'll offer my thoughts.
I had a 350z touring model 6 speed. It was a very comfortable sports car with good pick up, instant response at that.. and good top end (for stock). The mileage wasn't half bad either.. I got between 21 and 27 all the time. The shifter had a good feel and the seats were nice.
Traction becomes scarce on bad roads under throttle, and bad weather can be challenging. The nature of the car is plenty of understeer without using the throttle to steer you. And it really does feel heavy compared to the Evo(mostly felt in the nose). Funny that they weigh about the same.
The brakes found on every model except the track model brembos are inadequate at best. So I'd go for the track model if you really want a z.
