I guess this sort of setup might allow me to use 1/8 npt EGT for now and then switch to something else later.

That's for 1/4 thread, if you have 1/8 tapped you want the one above it.

I am choosing for a new manifold. Hoping to have 1/4 bungs (futureproof) and using an adapter for a 1/8 npt sensor for now.

Or do what I'm doing, get the K-type sensor you want and see if Z will pick it up. The only real difference is open or closed really.
