Can you stiffen the OLS gas pedal?
Being 6"4, I have rather large heavy feet. This causes extra fatigue with the OLS accelerator because it's such a light press, I am constantly putting strain on my ankle to keep from pressing it too far while cruising.
If there is some way to add even a little additional resistance to the gas pedal, I'd love to hear about it. Does anyone have any ideas? Beefier aftermarket spring perhaps? I'm not very mechanically inclined so I have no idea where to start with this.

Interesting request.
Kind of similar to my complaint about our steering feel (Too much power assist IMO, LINK)
Mostly likely you'll void the warranty, if you "mod" the gas pedal in any way ...

Does (or will anybody else drive this vehicle? Wife, GF, daughter, son, in-Laws??)
So, please take in consideration what other people may find difficult in operating your vehicle with ANY Kind of throttle pedel tweaking.
If no, then**.. Perhaps like you mentioned - replacing the OEM spring with a higher tension one.
Or, placing a small "stiff" foam block (and securely mounting it in place!) between the back of the pedal and floor board to give yourself a little more resistance.
NOTE:
Just remember those crazy Toyota/Lexus Unintentional-Acceleration problems they had...
Either through (what they claimed as) bad floor mats that interfered or "sticky pedals" or whatever..

Just be careful when tinkering with your gas/throttle pedal unit.
