Nothing tells you a/f like a wideband. actual a/f is more important than the exhaust temp. Temperature is relative, if you have a weak cylinder it will cool the exhaust temperatures even though you could be lean. Not to mention your monitoring #1 exhaust for the most part.
First of all, you don't need to go to the dyno in order to monitor your A/F ratios if you have an EGT gauge. Secondly, the wide band sensors react very slowly (relatively speaking) and are no more accurate than the EGT... The wide band is not reading the A/F or each specific cyl, just the average of all of them out of the exhaust pipe. One cyl might be running rich and another lean so it's not exact. The EGT will react almost instantaneously and if you measure the leanest cyl, you are safer than reading the average A/F ratio of all the cylinders... All serious (rally) racers use EGT gauges. many of them never do a dyno session... They just tune the car by repeated runs and adjustments while they watch their gauges (temp, oil temp, oil & fuel pressure, EGTs, boost, etc.)
If you already have a weak cylinder (which I'm not sure will affect the EGTs), you would presumably know this about your new EVO and you'd certainly be more worried about that than about doing more mods to the car that might require a wide band O2 sensor or even an EGT gauge....
