What turbo do you plan to run?

If weight and cost is not an issue just get the larger one the greater surface area should reduce back pressure resulting in some gains though perhaps marginal gains.

The smaller the core, the faster your spool will be.

I recommend the 3" for under 400whp... you won't heatsoak that unless you are hotlapping on a 100° day

Their 3" works great for me. It'll work fine unless you're talking about upgrading to a GT42 or something.

3 inch, you will lose spool with a bigger fmic, The 3 inch is going to be the best choice up until about 525-550

The 3" is the perfect choice for up to 500whp but you won't lose spool going to a larger intercooler as that is a bit of a misconception. The larger cores will actually outflow the 3" which is why they are beneficial when airflow exceeds 500whp worth. The bigger intercoolers will flow even better than the smaller core, though that extra flow is not necessary for no restriction at the lower power levels

3.5in...there is no drawbacks besides being a hair more $$$. Like Tom said you won't lose spool between the two but have a higher threshold before heatsoak. Fitment is equally good on both.
