Need opinion on water temp or oil temp

My car will see mods up to an fp green and will be a weekend driver not daily but i'll also be starting my path to competing in time trials

the car has a water temp guage that'll prolly do the job fine but it's not the best way

for this application i was going to use the guage as a oil temp and now im having second thoughts..... help please

i would also run an oil pressure. and it is super easy to run a sending unit. there is an open plug in the pump.
