The wires get taped into the maf sensor plug. One wire goes to the black wire on the plug and the other goes to the blue/red wire. It does not matter which one goes where. Simple as that.

is either method better than the other?

as in is running a wire straight to the eco better than splicing into the maf connector?

Yikes. Anyway, you have two choices, the red wire from the IAT sensor can go to either the ACD fuel temp circut (ECU pin 77 on 8's I believe) or you can use the MAF IAT input. The black wire is the ground and you can bolt that right to the intake mani.

When you set up your map you have to specify which input, as the default is the fuel temp circut for most of the pre-patched ROMS.

All in the IAT logging thread and multiple SD set up threads.
