with cleaning you engine compartment i would start with simply soap and water and see where you at. If you looking to use a degreaser.. simple green works great and it safe.... Your calipers are oxidized not too much you can do except re-paint. As far as your seats sell them and buy something else?? Im not really sure what your question is as far as your exhuast explain maybe?? hope this helps..
The clear coat on the Calipers is a well-known issue for Mitsubishi (even though Mitsubishi denies problems with clear coat). You *could* have them refinished, and they'll look new.
Engine cleaning: some detail shops can clean it for you professionaly, but depends on if you're willing to spend the cash. As for me, Car-washing soap works OK but you're not going to get the 'sparkly-spazzle' effect. However, it will help get the dirt/grime off.

Your engine bay looks like most of the problem is a little dust and dirt. It should come off with a little simple green and rags/spounges.
Your evo probably doesn't need this serious treatment but, common practice on sprucing up old car engine bays where I grew up was:
Take 2 cans of gunk engine bright.

Before you start: Turn up the temp on your home hot water tank and hook a garden hose with a sprayer up to the drain fitting at the bottom.
Park the car in an appropriate area with drainage. Soak the whole engine bay, firewall, underside of hood with the gunk. Let it sit for a good 10 min or so.
Turn on the steaming hot water and rinse everything down good till the water runs off clean. The hot water besides cleaning and dissolving grease better also dries faster than cold garden hose water.
I've seen this same method work some miracles. It's made some scummy old engine bays look like new with little work.

my dad took his car to a detailing place and they steamed clean it and it came out amazing!!! Most car detailing places will do it but I'm sure it's not that cheap. Clear coating the brakes have been covered here plenty of times and can be found by searching. The seat thing not really sure what you're asking
and as for the exhaust I would take a look at the rubber hangers, maybe one is worn out
