Drain and replace the fuel, check your oil and depending on how long it sat, check your hoses and all that good stuff

Where and how it was stored will have a lot to do with what you need to do. Stored in a climate controlled garage that was basically never opened... drain the gas, check fluid levels, check air pressure and go enjoy it.

Stored outside under a tarp will take much more to be sure no animals have chewed through wires/hoses or have made nests that could potentially catch fire and things of that nature

Parked outside under a tarp. Should the oil be good in the engine and tranny?

I recently ran through this with a Boxster I had sitting around for two years. I would check to make sure nothing nested in your exhaust, and at least in my case I opted to change the oil just because it's easy and relatively cheap. I also dropped a couple of drops of oil into each cylinder to ensure the rings were coated prior to starting the car the first time, but I don't know if this would possibly cause issue in an evo.

The main issue that I ran into were that my tires were completely shot because the air had gotten low over time and they developed flat spots. Also my brake rotors were in really bad shape from corrosion (don't know if you live in a dry area, might not be an issue).

Definitely change oil and replace fuel.
For that amount if time it wouldn't surprise me if oil leaks may occur,or water leak from water pump.
I would go to extreme and replace coolant and all fluids to be honest.
just my 2cents.
