what tires generally run more narrow than the specified size. My last set of 275/35 NT05 were rubbing the fenders on hard turns so I was hoping to get a tire that is still 275 but slightly less buldgy?

Most 275s will rub the fender liners on hard turns. This isn't really an issue though, you can use a heat gun and mold the plastic out of the way. or you can be real lazy like me and let the tire chew through the fender liner where it needs to (which doesn't take long at all and doesn't damage the tire).
