Then you should stick with the stock block and stay at or under 400 ft-lbs of torque.
Since you're not going to, ER is a good builder to run with. They know their **** - I wouldn't worry much about the build components. If you might overpower the build they'll work with you to make sure the build can handle it.
There's tons of odds and ends you're gonna need along the way. You'll figure them out as they come along (I'm discovering a bunch right now with my engine build).
You say you're FBO... does that include a ported or aftermarket intake manifold and throttle body? COP setup? What all do you have?
