Nothing anybody can tell you until you know what the CEL is for. Either pick up a code reader (they're cheap) or have your local auto parts store read the code for you.

My guess would be fuel trims, but get the code read.

I've got my fuel trims to stop going crazy, but now I get the occasional P0456 (evap emissions leak - very small) code and CEL.

Do you know where I can get one of these? Sorry OP, but I guess me asking would probably help you purchase one as well!

It's winter time, which means winter gas and worse mileage. I tend to lose 3-4 mpg during the winter and it's blatently obvious to me when the gas makes the switch.
