Here's a quick video of the sensor data I'm getting from the ECU, I'm not sure what the normal parameters are on some of these readings, so any insight would be appreciated.

Well I cleaned up the MAF sensor and reset the ECU. Still runs like crap but now isn't throwing any codes. 
If I'm at idle, my load% is anywhere from 100% to 95%. If I put the pedal to the floor it will hesitate really bad around 2500-3K RPM. If I'm easy on it I can get to almost 4K before my RPM's drop to around 3K and it stutters really bad. I'm not even hitting a rev limit at 4K anymore, it just drops down and spits and coughs. Now when looking at my load % it drops down as I rev the engine up. Also my "MAP ("HG)" goes down as I increase the throttle... It seems like something is backwards for lack of a better description. I'm just so fed up at this point...

How do the spark plugs look?
Cleaning the MAF I don't think will do the trick, you might need a new one.
Also check the timing, make sure you didn't jump some teeth.

I replaced the plugs the other day, but their covered in black crap. I can put my hand about an inch or two from the end of the tail pipe and it'll be covered in black within several seconds at idle...
as far as the MAP sensor reading, i know what you mean by backwards, it's in vacuum at idle, i would think the manifold pressure should increase, or get closer to atmospheric (29.92inHg at sea level) when throttle is open.

Yeah, and instead of increasing it's decreasing. I've seen it go as low as 5.6 inHg while under throttle.

The thing I'm wondering is: If the MAF is bad would it cause the ECU to dump fuel in? I understand the computer would try to make sure the AFR doesn't lean out if it can't tell how much air it's getting, but you'd think it would be dependent somewhat on the throttle position. Seems to me like the injectors are at 100% duty cycle regardless of throttle position and RPM...
