You want to go from completely stock to 500whp? Injectors will be the least of your worries.

You have a long road to travel my friend. You might want to start at 350whp especially since you have an 03' VIII. Depending on what dyno 350whp is read on, that amount of power will easily put you into the 12's.

If you are going to jump that high in injector sizing I suggest just getting 1200s as you will most likely be running e85 or w/m to attain 500whp. They are the same price as 1000's.

No you can not just plug and play with injectors of this size as they will be injecting over twice as much fuel/IDC. You have to have them scaled. Your stock fuel rail should be fine.

Do you even have an upgraded fuel pump?

Walbro is the way to go. Pick up the whole kit that replaces the large particle filter(looks like a teabag).

You need to do a TON of research or go to a reputable shop, it really doesn't seem as if you have a clue about modding the car. Read and learn, there is a lot of information on this board.
