NOW I'm getting excited!

I've read these maps make the car pull harder throughout the power band in a more linear fashion. Does it really make the car feel like a NA V6?

I just don't want to lose that kick in the pants my turbo gives me

Is it a good tradeoff? I feel like my car is incredibly "quick" as-is. Is it gonna lose the low-end altogether?

No trade off at all, your entire powerband will be improved.
