EGT readings - What should they be?

The gauge that you referr to may be intended for large displacement normally asspirated engines, far more common in the hot rod seen 20 years ago. They typicaly run much lower EGT's compared to a high reving turbo engines.
I find that most gauges loose accuracy when they get close to the limit of there range. That is why I recommend a gauge where your typical operating values will be well within its operating range.
I'm not questioning your logic and your opinion, but it is interesting (or maybe alarming) that manufacturers such as Autometer (as well as lots of others) continue to make gauges that read only to 1600°F when the FI engines have been around for 80 years and have been fairly common for the last 10 or more years..... As you say

... 20 years seems like long enough time for these folks to start making gauges that can read 200°F more!

Anyway, perhaps in the case of the EVO, the gauges might be OK since according to a number of guys who have them, the EVOs tend to produce temps well within the range of the Autometer gauges... Still, I do wish my gauge would read at least to 1700°F.... I don't know if the accuracy will drop off significantly towards the upper limit of the gauge... The K type thermocouple can easily detect and respond to higher temps, and the gauge is nothing more than a glorified volmeter... Surely the circuitry does not change that much.... At least I hope not....
