That video doesn't show what a car tuned on straight water can really do. Big Al even admitted that the car was breaking up which is a symptom of too much water and too rich an AFR. Pure water injection loves lean AFR's. A real test would have been if he spent some time tuning that Evo on pure water before moving on to the alcohol.
To extract the most out of plain water injection you will need to run it a fair bit leaner to prevent misfiring. Some have gone a LOT leaner and finally picked up power. The problem with it is if you run low on water you could be up a creek.
Of course running out of 100% methanol or any other mixture also could be catastrophic.
I run blue washer fluid with a two stage injection. My oldest car (1993) washer bottle hasn't had any scum or odd buildup at all and it's had blue washer fluid all it's life. I really don't see a problem with washer fluid as long as you choose it carefully.
