No, 250-350ms isn't slow for a mechanically-actuated system. A car's power door locks operate in this timeframe. It takes time for a motor to spin up and turn a geartrain to do useful work. Race-type gearboxes can have heavy-duty components that operate faster because they don't need to worry about lifespans of parts, since they regularly rebuild or replace things.
The cool thing about an Audi DSG is that the next gear is already pre-selected, so you just have to wait for the clutches to disengage and engage, which happens simultaneously.
